Veggie Pasta SaladWhat a week it has been! We have been working really hard on our blog and the progress is fantastic! It’s so exciting that everyone is loving our recipes. We have quite a few awesome recipes in the works right now. Today’s post is a very simple veggie pasta salad recipe. We make this pretty often around here. It’s quick, cheap, and delicious! With such a large family, finding budget-friendly meals can be challenging. We have been eliminating more of the vegan processed foods, like fake cheeses and substitute meats, and replacing them with more plant foods. The processed vegan foods are ok as an occasional treat, or to help you transition into veganism, but they shouldn’t be used on a daily basis. Our veggie pasta salad recipe is great for lunchtime or a summer vegan barbeque side dish!
To make this pasta salad, all you need is some vegetable rotini pasta (or any variation will do), some cut veggies. and some delicious vegan ranch. You can use any vegetable you want in this salad. Today we used broccoli, tomato, cucumber, shredded carrots, and celery. This recipe would be great with some onion, peppers, or squash as well! Remember, all of our recipes are family sized, so if you’re feeding less than nine people, you can cut the recipe down in half. We use two boxes of pasta but many of you may only need one. Cook your pasta following the directions on the box, and rinse them in cool water after. While your pasta is cooking you can cut your veggies and make your ranch. Once your pasta and veggies are ready, just mix them together and toss them in a bit of olive oil or Italian dressing. Sprinkle with salt and pepper, if desired. you could actually leave your pasta salad just like this and it would be delicious! Most of the kids love adding the ranch, but a few do not so we keep the ranch dressing separate from the salad. We also cut up some watermelon to go with our salad. Vegan Veggie Pasta Salad
This vegan vegetable pasta salad is simple and delicious!
- 2 boxes rotini pasta salad
- 15 oz vegan ranch
- 1 cucumber (diced)
- 2-3 carrots (shredded)
- 2-3 celery stalks (sliced)
- 1/2 cup cherry tomatoes (halved)
- 1 cup broccoli (chopped)
- 1/4 cup italian dressing or olive oil
Cook your rotini pasta following the directions on the box
Meanwhile, chop all of your veggies for the salad

When the pasta is done cooking, run under cold water to cool.
Add the chopped veggies and toss with Italian dressing or olive oil
Leave the ranch on the side, or mix it in if desired.
